2 Ingredient "Ricotta Cheese"

There is a disclaimer here: I in no way want to claim that this is real ricotta cheese (which is super easy to make and actually follows the same recipe as paneer or cream cheese when you make it - milk boiled and some form of acid like vinegar or lemon juice). And I first learned this hack from some other expats years ago when i was living here single. This is simply an American’s way of not paying $20 for some ricotta cheese and using ingredients that are readily available and cheap no matter in which part of South Asia you live.

2 Ingredient “Ricotta Cheese”

5 minutes

500 grams of paneer

milk of your choice

salt

  1. Option A: Crumble up your paneer in your blender. Add milk (i’d start with around a cup of milk) and blend until smooth. At this point, you may need to add more milk depending on how thin you want the ricotta to be. Salt to taste! Serve it with some caramelized onions on top as a dip with my toasted Sourdough Sandwich Loaf!

  2. Option B: Add an egg, 1 tsp oregano, salt to taste, and blend until smoothe. Use as ricotta in my Expat Lasagna recipe!
