Copycat Starbucks Egg Bites
serves 4-6 - 30 minutes
250 grams paneer
10 eggs
1 tsp salt
1/2 tsp pepper
1 cup shredded cheddar, gruyere, or parmesean cheese
1 cup chopped ham or bacon (optional)
Preheat the oven to 165 degrees.
Add the paneer, eggs, salt and pepper to your blender and blend on high speed for about 2-3 minutes until the mixture is smooth.
Meanwhile, boil some water.
Put about a tablespoon of shredded cheese into each muffin hole. If using breakfast meat, also divide it evenly among the muffins.
Pour the egg mixture evenly among 12 muffin tins. Setting the muffin tin onto an oven safe tray, put the tray in the oven. Once in the oven, pour the boiling water into the tray that the muffin tin is in to create a water bath. The water should come up to about halfway on the side of the tin.
Cook for 30 minutes until the egg mixture is cooked all the way through.
Serve warm with fresh fruit and coffee or tea!
