Not Your Grandma's Creamed Corn

Right now, I don’t have a photo of my creamed corn, so you’ll have to make do with this adorable photo of my kid eating corn on the cob. HA! This recipe is one I created years ago and it’s one that quickly became a staple for me to bring to our Thanksgiving potluck. It’s not what you would call “traditional” creamed corn, but you’ll have to trust me when I say it’s amazing. I made it last year for our first overseas Thanksgiving and it was a huge hit! Try it, I know you won’t be disappointed.

Not Your Grandma’s Creamed Corn

serves 6-8 - 45 minutes

1 kg frozen (or fresh) corn

360 grams of cream cheese (2 packages of Britannia Cream Cheese)

1/2 cup chicken broth

1.5 TBS dried thyme

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp Trader Joe’s mushroom powder (optional)

1.5 tbs Apple Cider Vinegar

Salt & Pepper

STOVETOP:

  1. Add all ingredients to a large pot and cook on medium heat for 20 minutes until cream cheese is melted.

CROCKPOT:

  1. Add all ingredients to the crockpot and cook on low for 4 hours or high for 2 hours.
