Apple Cinnamon Pancakes
Let’s be honest — pumpkin spice is a divisive subject. Love it or hate it, most people don’t have grey reactions to it. Earlier this week, a friend brought us some apples and my kids have devoured them. This morning, when I was trying to figure out breakfast, I had this idea that I would slice the apples thin, cut out the center seeds, dip them in pancake batter, and they’d be these fun little apple donuts. They didn’t keep the donut shape, but they certainly were delicious fall flavored treats! After I photographed this stack, Faye proceeded to eat the rest of them. Ha!
Apple Cinnamon Pancakes
serves 4-6 - 30 minutes
1 recipe of The BEST Homemade Pancakes
1 tsp ground cinnamon
2 apples
Make the Best Homemade pancakes recipe and add 1 tsp ground cinnamon.
Turn the apple on its side so that the side of the apple is on a cutting board (when you start slicing, the side of the knife blade should be perpendicular to the apple stem). Slice the apple into thin slices and cut out the core of the apple with either a small circular cookie cutter or knife. The apple slices should be the shape of thin donuts.
Heat a skillet over medium - high heat and melt a tsp of ghee. Take the apple donuts and dip them into the pancake batter so that they are fully coated and drop them in pan. Cook until the bubbles on top of the pancake start to burst, then flip them. Cook for an additional minute.
Serve warm with butter and maple syrup!
