The Best Parmesan Roasted Carrots

30 minutes - serves 4

1 kg carrots, peeled and sliced

6 garlic cloves minced

100 grams parmesan cheese, grated

2 tbs ghee or olive oil

salt & pepper to taste

  1. Preheat your OTG to convection at 230 degrees Celsius.

  2. Toss the carrots with all the ingredients, leaving half the parmesan for later.

  3. Lay the carrots on a roasting pan so that it’s a single layer. Roast the carrots for about 10 minutes on the bottom rack. Toss and roast for an additional 7 minutes. Add the remaining parmesan cheese and roast for an additional 2 minutes, until cheese is melted.

  4. Serve warm with my 5 Ingredient Orange Teriyaki Chicken!
