The Best Parmesan Roasted Carrots
30 minutes - serves 4
1 kg carrots, peeled and sliced
6 garlic cloves minced
100 grams parmesan cheese, grated
2 tbs ghee or olive oil
salt & pepper to taste
Preheat your OTG to convection at 230 degrees Celsius.
Toss the carrots with all the ingredients, leaving half the parmesan for later.
Lay the carrots on a roasting pan so that it’s a single layer. Roast the carrots for about 10 minutes on the bottom rack. Toss and roast for an additional 7 minutes. Add the remaining parmesan cheese and roast for an additional 2 minutes, until cheese is melted.
Serve warm with my 5 Ingredient Orange Teriyaki Chicken!
