Copycat Monte Alban Chicken

This one goes out to all my friends who have ever at one time tasted the Mexican Manna that is known as Monte Alban. Whether you’re stateside or in another country — you’ve missed their taco salad, bean dip, EL PASO dinner (amiright) or chicken quesadillas. Today was the day I decided to remake their chicken for tacos — and am now seriously contemplating making a quesadilla with it — but either way. This recipe could not be easier, and in 20 minutes on the instant pot, it’s DONE. No crazy ingredients, just full on YUM.

Copycat Monte Alban Chicken

25 minutes - serves 4-6

4 chicken breasts, or 1 kg of chicken

2 tomatoes, roughly diced

1 red onion, roughly diced

1 head of garlic, minced OR 1.5 tbs garlic powder

1/4 cup chicken broth OR 1/4 cup water and 1 tbs chicken boullion

1 tsp ground cumin

1 tsp Worcestershire sauce

1 tsp paprika

salt & pepper

  1. Put all the ingredients in the instant pot, starting with the chicken broth and tomatoes so as to avoid the “burn” error. Cook on high pressure for 20 minutes.

  2. Quick release the valve and serve warm with my Sourdough Discard Tortillas and Copycat Mexican White Queso!
