The Easiest Greek Potato Fries
40 minutes - serves 4
5-5 medium potatoes
1 tbs dried oregano
1 tsp dried rosemary
8 garlic cloves minced (or 1 tsp garlic powder)
1 tsp onion powder
1 tsp salt
1/2 tsp pepper
1/4 cup olive oil
Whipped Feta Cheese
8 oz feta cheese
8 oz plain yogurt
2 tbs olive oil
Preheat convection oven to 240 Celsius..
To a high speed blender, add the whipped feta ingredients and blend until smooth and creamy. Store in the refrigerator for an hour.
Dice potatoes into sticks 1 cm wide and toss with remaining ingredients in a large bowl.
Layer the potatoes on a baking sheet, careful not to overcrowd the pan
Bake for 35-40 minutes, tossing halfway through, until golden and crispy.
Serve warm with cold whipped feta!
