Protein Packed Greek Lentil Salad

30 minutes - serves 6

2.5 cups cooked lentils/dal cooled

3 roma tomatoes diced

1 medium sized cucumber diced

8 oz feta cheese

DRESSING:

1/4 cup ACV

1/4 cup EVOO

1 tsp garlic powder

1/2 tsp pepper

1 tbs honey

1.5 tbs dried parsley

  1. Mix first 4 ingredients together.

  2. Mix dressing ingredients together and pour over lentil mixture.

  3. Refrigerate for at least one hour until chilled. Serve cold with your favorite greek sides, like my Greek Potatoes!
