Protein Packed Greek Lentil Salad
30 minutes - serves 6
2.5 cups cooked lentils/dal cooled
3 roma tomatoes diced
1 medium sized cucumber diced
8 oz feta cheese
DRESSING:
1/4 cup ACV
1/4 cup EVOO
1 tsp garlic powder
1/2 tsp pepper
1 tbs honey
1.5 tbs dried parsley
Mix first 4 ingredients together.
Mix dressing ingredients together and pour over lentil mixture.
Refrigerate for at least one hour until chilled. Serve cold with your favorite greek sides, like my Greek Potatoes!
