Easy Roasted Sweet Potatoes
Unlike the States, the Asian expat cooking life is often a slave to seasons — mango season, broccoli season, and in this case: sweet potato season. I got a lot of requests for sweet potato recipes on my instagram a few weeks ago, and I decided to make this recipe that was an easy staple option for me and Brodie when we first got married. It’s super easy, healthy, and the perfect blend of sweet and savory — just a hint of cinnamon to bring out the sweetness of the potatoes. Make this for your crew, I know they’ll love it (and you will love how quickly it comes together!).
Easy Roasted Sweet Potatoes
30 minutes • serves 4-6
1 lb (500 grams) sweet potatoes, cubed & peeled
3 tbs olive oil
1 tbs garlic powder
1 tsp onion powder
1 tsp paprika
1/4 tsp ground cinnamon
1 tsp salt
Preheat OTG to 230 degrees Celsius on convection.
Toss all ingredients together in a bowl.
On a lined roasting pan, distribute the sweet potatoes and roast in the oven on the 2nd to lowest rack for 20 - 25 minutes until fork tender.
