Viral Tik Tok Green Goddess Slaw

I absolutely love this recipe. I love it so much, mainly, because it encompasses a lot of what summer feels like. It’s fresh, it’s creamy, it’s healthy — if you don’t add it to your summer rotation of salads to enjoy and keep in your fridge, you’re missing out! Both of my girls love it, and it’s actually one of Brodie’s favorites too. We love eating it with grilled chicken and some fresh fruit on the side.

Viral Tik Tok Green Goddess Slaw

20 minutes - serves 6-8

SLAW

1 head green cabbage diced

4 cucumbers diced into 1 cm cubes

4 green onions diced

DRESSING:

1/2 cup cashews

5 nimbu juiced (about 2 limes & 1 lemon)

1 1/4 cup fresh basil

1/2 cup nutritional yeast

4 tbs ACV

1 tbs honey

1 tsp salt

4 garlic cloves

2 green onions diced

1/3 cup olive oil

  1. Add all dressing ingredients to a high powered blender and blend on high until dressing is smooth.

  2. In a large bowl add the slaw ingredients and toss with dressing. Refrigerate for 2 hours and serve cold!
